LAWS may be the only way that Ukraine can definitively defeat the Russia military. In future conflicts, countries with the most-developed tech sectors -- especially the USA and China -- will definitely field LAWS because if they don't, they will lose to enemies using LAWS.
Your anti-ship LAWS example is one that makes a lot of sense. I've considered the same example in the past year after seeing developments in the war in the Black Sea between Ukraine and Russia.
In my opinion as a software developer, it would not be difficult to develop UAV systems that would use GNS (if available), inertial navigation or even very crude inertial navigation to move from Ukrainian positions toward, for example, Surovikin line trenches, identify those trenches using computer vision, and then fly over the trenches until the drones can use computer vision with either standard or thermal cameras to find human targets, drop something on them, return to some field that is roughly behind lines, and trigger a beacon that allows the system to be retrieved for repeated. If GNS isn't jammed or spoofed, the UAV could return to a predefined point.
Build thousands of things like this, and maybe you could sit 30km away from Surovikin line trenches and cause massive attrition to any humans inside or within 500m of those trenches.
In another example, UAV systems could be created to identify, for example, fuel trains. Trains with fuel tankers would be pretty easy to pick out with computer vision. They could use a mix of intertial navigation and computer vision to find and then follow known rail lines. Then they could find and then hit the fuel trains. This could be done, for example, on or near the Kerch bridge.
It would also be possible to develop autonomous UAVs, launched from autonomous boats, to find and target planes on airfields near the coasts of Crimea.
