This is just the industrial revolution all over again. Just let the AI proliferation reach its natural conclusion, and at some point people will get tired of it, and go back to wanting smaller artisian products. Because mass production will fuck itself over at some point from its very success.
For historic and present examples of that, see farmers markets, local/organic foods, and craft fairs (or whatever they're called).
