I agree with most of your points and I believe that traditional and manual digital art will never die, but I do think that AI art does have its place (if we can work out the copyright and attribution kinks).
While AI isn't good at the little details, it is good at giving an impression of a concept. If you look at the lion or hare from a distance, it clearly gives a certain esthetic and impression. Especially from a story telling perspective, it's often enough to convey this impression, without bothering with the details. That's true regardless of whether the art for the story is generated by an AI or not. In these cases, they aren't meant to look at in detail. They're only there to spur your mind to guide your imagination of how the characters in the story look and behave and what setting they are in.
You could draw parallels to lossy compression, where high frequency information of a picture is thrown away, without impacting the important parts of the image. It would be nice to preserve the original image quality, but the lossy compression makes it so much easier to transfer large images (and video/audio) over the internet without using too much bandwidth. With AI you might lack details of how anatomy works or how buttons and fabric interact, but if you look at it from a distance or only give it a quick glance to get an impression of the setting, those details might not be important. A writer who never learned to draw anything beyond stick figures, doesn't have enough funds to commission someone and just wants to write a story with some imagery to guide the impression and imagination, without learning a whole new skill that they're not interested in learning, they could definitely benefit from something like AI. Not all images are made for the purpose of being standalone art.
I'm interested to hear your take on this use-case. It's a valid use-case I've seen used with a lot of success, but I'm interested to hear if you have any good alternatives for this use-case. For cover art I could definitely see a one-off collaboration between an artist and a writer working, but for longer running stories you might have the issue of the interests of the artist drifting away from what the writer is making, which would lead to needing a new artist for the rest of the story, causing inconsistencies in the art style for the story. This might not necessarily be an issue for some amateur writers, but it could definitely detract from reader/viewership and engagement, if some of the readers preferred a certain art style.
