This only applies if we don't get AGI (general intelligence) which can do anything a human can do. If we do get that, then any new opportunity from Jevon's paradox will also be done by the AI, since it is general and by definition can do a task a human can. However, I believe we're not going to reach AGI and AI will transform the economy nonetheless.
