"LLMs can write poems and understand parts of humor ... which we can't code by hand." But you can rather easily code an algorithm to copy poems, jokes and their explanations from a dataset. How is that fundamentally different? A much bigger dataset can lead to flexibility of fetching more jokes and more explanations but that necessitates no "understanding" at all, like the "chinese room".
