Here's what I've learnt from trying midjourney (to generate references for making art manually) The ai doesn't really know what it's making, its just mashing images together. It seems to recognise values and use the colour palletes/placement of colours from whatever artwork its using to create an image. From this it builds an image out of these two things but its not intentionally creating the shapes, subject or recognises either of these as anything other than a mash of values and colours. Like, if you ask it to create and apple, its not creating and apple, its just taking values and colours from whatever its found in the search engine that relates to the word "apple" and throwing it together. Thats why it can't do hands, fingers, teeth, toes etc pretty much anything that has specific digits or sequence. Its not seeing a hand with 4 fingers and a thumb, it just recognises a bunch of value ranges and mashes it together. It can do things like faces because the value placements are consistent, but with a hand the angles and positioning if fingers and shadows is diverse. It also struggles with letters aswel I've noticed, again because it's not actually building an image from intentional shapes like an artist would, but just seeing dark and light and mashing it together.
