I think your assessment of UI/UX is correct for web, but likely not for UI/UX in video games and apps. Web work is easily replaced with templates and generic design assets. I work in UI/UX for games and can’t see AI taking over that role at all. UI/UX in games is more like the Tortoise. It evolves as the game design evolves and requires constant iteration. The assets require specific construction with layers and a specific export process to work within the game engine. Animation is sometimes involved and there are multiple levels of communication necessary (understanding the game design goals, shifting design needs, relaying implementation goals, design polish, playtesting etc.) Not to mention, games that use AI get a horrible reputation from players and likely are not going to sell well at all.
