I think you’re missing a viewpoint here Alex. For someone (or something) to lie it has to know the truth and choose to obfuscate by giving a different answer.
There is no ‘I’, no individual with AI. When it answers one question this might be a ‘different’ AI bot to the one that answered the previous question. So when it answers “I wasn’t lying” I think that’s accurate because it doesn’t ‘know’ the truth or what it said before, because there is no individual with AI.
