I'm not a big AI image generation fan, but I think you are glossing over one of the primary arguments. Image generation models are simply a new tool that artists can leverage to make art.
In my own work, I use image generation based tools for photo editing. This is, because I enjoy photography; I don't enjoy making tedious edits. These tools allow me to spend more time on the part of my craft that I love, and less time on the tedious, but necessary labour that is required to achieve my vision. We need less AI tools being sold as replacements for artists, and more AI tools being developed to help artists.
