LISTEN. There are no jobs that robots and/or AI cannot do. Can they do them well? No, but they can do them cheaply, they don't take time off and they work 24/7. What they produce is a degraded version of what humans can produce. The services they render are not satisfactory, but the employers don't care if you are satisfied. EVERY JOB IS ON THE LINE.
The only way to stop this is to elect people who will pass legislation that ends this take over. Secondly, every time you are asked to talk to a chat bot, ask for a human and when you are asked to fill out that short survey, be sure to say that you are angry about wasting time on a robot. HIRE HUMANS.
Next time, it won't be driverless trucks. Next time, you will be facing emergency surgery and there won't be a human in sight.
