I think personally personally AI art has a similar issue to AI coding, which is something I'm more familiar with as a programmer. The way I tend to look at it is AI can generate 'art' that is basically smacked together images, it can create something that gives you a feel for how it could look if you commissioned an artist to create something truly unique for you, but it doesn't entirely replace a human artist. I think for the argument of 'Just pick up a pencil and start trying', it's also worth remembering not everyone who wants art created is interested in art. For example, if I asked you to just open Visual Studio (Coding editor) and just start trying to create a program, would you be willing to do it? Or does it simply not interest you enough? Maybe you'd commission someone to do it instead, or, you could ask ChatGPT and it'll spit out 'something similar' to what you wanted yet it doesn't work or doesn't work as intended. (Similar to how AI art is not exactly what you wanted) Overall I agree that people creating arguments like that sound insane, AI isn't really a replacement for artists or anything else, but it can be helpful as a reference tool to get an idea of what you want. ^^
