Actually, they did wrote about AI in the Dune universe! While it is true that in the book Dune AI is a forbidden technology, there is plenty of AI in other books of the franchise like "The Butlerian jihad" or "The battle of Corrin". The lack of AI in the general Dune universe is actually due to one solution to the AI problem: "do not use AI to replace what a human can do". Humans have to do stuff to be able to grow.
