The contrived Ghibli case analysis is egregiously wrong: humans can be liable for copyright violations just by doing "the creative process" (ask Pharrell about Blurred Lines). If you do "Ghibli inspired" art work, you may be completely legit, or you may be covered under "fair use", or you may be liable for "substantive commercial copying".
I expect that the only way that an AI, trained on your work, can generate art with "substantial similarities" to Ghibli's art is if you fall under the later case - which means *both you and the AI company* can expect a strongly worded letter from Studio Ghibli.
