As much as I love the AI stuff, I think people going out of their way to make models based on someone's art who does not want models of their art, is kind of icky. It's really difficult because of the whole open source nature of it all though. Even if someone started fresh, with images from Getty Images, or Shutterstock, the royalty free stock images, there's a good chance that even then, people will say "Oh I want art based on [artist name] so I'll just train a model for that." and... well, you have that exact same mess all over again. It's an insanely massive issue from both sides, really. I myself, enjoy tinkering with it, but I don't post anything I generate, unless sharing stupid stuff with friends counts. It's all for myself, and occasionally, something that I use for inspiration, to rebuild it in Blender, and the 3D modeling and stuff I'd still have to do myself. And textures. It's actually surprisingly good with textures, generating tiled textures, then using a normal map generator online, is something that I find helps. I usually grab one of my own photos, or at least a small section of one of my own photos as a reference saying "I need a texture of a road like this." since.. while I'm not terrible at turning my photos into textures, I don't have mad skillz in photoshop to make something seamlessly tileable and when I try, it usually ends up looking like a disaster. Still though, the best choice would be something that's fully royalty free. Shutterstuck, Getty Images, sure it's going to cost a shitload of money, but that's going to at least not have artists work taken without permission.
