I'm glad you mentioned that the process of creation has essentially stayed the same since the very beginning. Arguing that AI is just like when Photoshop was created doesn't seem fair to me, because the fundamentals are still required to do both traditional and digital. You still need to learn perspective, anatomy, composition, and so on (for figurative art). Using AI gets rid of the need to learn the fundamentals at all. So can you really say you're an artist if you haven't even learned the fundamentals, the basics of something? Some people might say that getting rid of these things is just a part of progress. But I disagree, simply because I don't like the idea of humans letting machines make decisions for them. The more you know about how something works, the more accurately you can describe what you like about it. And learning about something, trying to understand it as much as you can helps you develop your tastes. I think a lot of people feel like they already know exactly what they like, so describing that to an AI is enough. But it's so much more satisfying when you refine your taste through a deeper understanding of what you like, and why you like it. I recognize that this is just my own perspective and it's not the objective truth, but I really think that people in general should be more curious about the things they enjoy.
