It feels like a big part of the "AI isnt copyright infringement" argument is that we do not exactly know how any single work it was trained on influences the final result. While most other types of computer function that you apply on some artistic work (no matter how many you use as input) is still copyright infringement.
To me it sounds similar to if you tried to argue your company did not commit fraud or embezzlement because your internal finances are so complex that no one understands them.
A.I. often has simply outputted existing works, that is clearly copyright infringement. Even if they simply band-aid the A.I. by removing those outputs its still the same underlying infringing system.
Finally, humans could conceivably discover a lot of artistic styles and whatnot on their own if left alone for long enough. If the A.I. learns in the same way then if we simply speed up their simulations then they should also be able to develop artistic styles from scratch. The fact these tech bros need the existing artistic works shows that you extract something of value from it that the A.I could not create on its own.
