If I'm understanding this correctly, it sounds like Claude did something that an engineer with a fairly basic understanding of SQL would be able to crank out extremely quickly as well. The reason that ot takes so much time for engineers is testing to ensure that your change to the SQL isn't going to massively fuck something up in a "who should we fire for this" sort of way. From your description it also sounds like no one actually did any testing...just one dude eyeballing it and giving it a rubber stamp. So, of course it's fast if you don't bother to do the due diligence that is the sole reason it should take more than a few minutes in the first place. I absolutely think you should be scared for your job, but it has nothing to do with AI replacing you.
