I have to say this sounds like an interview with someone who hasn't studied very much about where health care costs originate. *Hint: It's not doctors.*
The biggest fraction of the health care dollar is spent on [hospital stays](https://www.cms.gov/files/document/highlights.pdf). This includes armies of administrators administering things like insurance negotiations, HR issues, staffing issues, DEI departments, ordering supplies etc. etc. etc. Then there is an army of health care workers taking blood, talking to patients when they arrive, cleaning ORs. supplying and packaging supplies etc. etc. etc.
Overall, the US spends far more on health care administrative costs than other countries and this accounts for approximately [25% of overall healthcare spending](https://jamanetwork.com/journals/jama/fullarticle/2785479). Obviously, some of this cost is necessary but it is still a large fraction of costs.
Approximately 20% of the US healthcare dollar is spent on physician and clinical services - where one might expect an AI to cut some costs. However, when you see a physician you are met by a receptionist, usually see a nurse or other healthcare provider before the physician etc. How will an AI lower that fixed cost?
In short, it's a good idea and could help cut costs but a dramatic decrease is totally unlikely with our current system. Indeed some studies, like in the second link, seem to think the biggest driver of healthcare admin costs derive from patient choice - related to not having a single payor.
