What do you think the point of writing in school is for? The majority of writing produced in school isn't producting original research, it's *practice* so that people can learn how to write well and to reason well in whatever discipline the writing is about (whether that be history or business or something else).
For a parallel from the "world of technology", education in most of the fields of engineering (electrical, mechanical, civil, etc) have you walk through the process of setting up and solving equations by hand in school, even though real practicing engineers don't spend their days with a pencil and paper cranking through integrals. Practicing engineers use software or consult precomputed tables to find the values that they'd need to use for some component they're working on or structure they're trying to build.
But going through the tedious foundational work as part of school makes you better informed about the end products that you're trying to make. You get a better understanding of both the fundamentals of the field and what sort of mistakes it's easy to fall into... which is important if you're going to use AI to produce anything important. You lean how to do the thing by *doing the thing*. If you just jump to using AI to do a thing, then you skip over a lot of the actual learning.
