The difference is that most studio musicians aside from symphonic members are not unionized and have allowed this to be the case. Also, as a drummer myself, it wasn’t always the case that a producer could put the session through an AI model and pull a customized performance from it. They would have to sample each individual drum in detail and then program it vie a midi program. Not just type “joe plays the blues” and get and instant performance.
