It's more like everyone goes to service and the real salary of service goes up to something like what 60k would buy today, due to the enormous cost decreases in anything that involves white collar work. There can never be "not enough" service jobs in a post-AI world; humans of the upper classes (not just legacy rich in a post-AI world, also anyone in the medical field and expect trades salaries to go up even further since more than half the population including me are not physically fit enough to be good at trades) will simply demand more services if there are people to do them and they have money to pay them, then those people getting paid will in turn demand more services, which provides the wage pressure upwards to an equilibrium point.
