It's hard to pick a specific place - I partly live there and still haven't seen everything... If you enjoy white-water rafting there are tours in Pai (the closest tourist town with a very fun windy road leading over to it - if you have a decent car/bike its extra fun). Rent a motorbike and just drive the roads around Chiang Mai - there are local salt mines and mountain maze farms contained within rolling hills as far as the eye can see. Food is amazing - anything from contemporary french to local traditional and there are some very legit burger joints (Duke's used to be good but now it's like a meh version of Chili's). If you want local food do go to the small roads that comb the city where a plate of noodles costs just 35 baht cuz that is definitely the best way to get an idea of what flavor profile the locals like (different from southern thai cuisine, northen thais are actually decendent of the lanna people). Temples are interesting enough (I've seen so many in my life they all look the same by now but at least in Chiang Mai I was bothered to have a look - there's one where they kept a crazy monk from leaving by building him an underground monastery) just be sure to dress appropriately. One thing I can say for sure is that Chiang Mai isn't one of those cities you can go to without knowing what you want to do - like with Venice you can literally just go and not know a thing and find things to do every time, but in Chiang Mai things can be quite hidden or distant (relatively) and sometimes you just have to be in a certain scene (like some people come here to go dirt-biking) to find what you want.
